About the Recipe
This is one of our favourites for that delicious energy hit before a hard workout. It helps perk you up and gives you some great quick-digesting carbohydrates to keep you moving. It's also a delicious option when you don't want to waste the bananas you didn't manage to eat yet.

Ingredients
4 bananas (over ripe)
1 egg
1 tsp vanilla essence
1/3 cup oil/melted butter
2 tbsp granulated sugar
1.5 cups plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
150g blueberries
Preparation
Step One
Preheat oven to 180* fan. Line a large baking tin with greaseproof paper .
Step Two
Combine all your dry ingredients in a small bowl - give them a mix up.
Step Three
Then mash the bananas in a big bowl and mix in all the wet ingredients (egg, vanilla, oil) and sugar until smooth.
Step Four
Add the dry to the wet and mix until there's no clumps of flour.
Step Five
Fold in the blueberries.
Step Six
Whack it all in the lined tin and smooth out the top.
Step Seven
Take for 30-40 minutes - until golden on top and a knife comes out clean.
