About the Recipe
These pancakes are ideal for those lazy Sunday mornings, or for a quick pick me up mid-afternoon with a high protein yoghurt. Gone are the days of feeling like pancakes are an over indulgent treat - they are a way of life!

Ingredients
For Pancakes:
188g Plain Flour
1 tbsp Sugar
2½ tsp Baking Powder
½ tsp Salt
1 medium Banana (overripe)
2 large Eggs
266ml Semi Skimmed Milk
½ tsp Vanilla Extract
3 tbsp Unsalted Butter, melted
For Cooking:
1 - 2 tbsp Vegetable Oil
1 tbsp Unsalted Butter
Optional:
Maple Syrup
Berries
Preparation
Step One
In a medium bowl, whisk together the flour, sugar, baking powder and salt.
Step Two
In a small bowl, mash the banana with a fork until almost smooth. Whisk in the eggs, then add the milk and vanilla and whisk until well blended. Pour the banana mixture and the melted butter into the flour mixture. Fold the batter gently with a rubber spatula until just blended; do not over-mix. The batter will be thick and lumpy.
Step Three
Set a non-stick pan over medium heat until hot. Put a pad of butter and one tablespoon of vegetable oil into the pan and swirl it around. Spoon the batter. Cook until a few holes form on top of each pancake and the underside is golden brown, about 2 minutes. Flip the pancakes and cook until the bottom is golden brown on both sides.
Step Four
Repeat until all batter is cooked.
