About the Recipe

Ingredients
3 Chicken Breasts
150g Cooking Chorizo
2 Garlic Cloves
4 Large Tomatoes
1 tsp Sweet Paprika
1 pinch of saffron, optional
200g Frozen Peas
Handful of Fine Beans
300g Rice, preferably paella or bomba rice
800ml Chicken Stock
Salt
1 Lemon, optional to serve
Preparation
Step One
Chop the chicken and chorizo into small pieces
Step Two
Chop the tomatoes into chunks and discard the seeds; mince the garlic into a smooth paste; and chop the fine beans into halves
Step Three
Fry chicken pieces until golden brown on all sides, remove and fry the chorizo pieces until brown and crispy. Remove and allow the pan to cool.
Step Four
Gently fry the chopped garlic until it starts to jump. Add the rice and fry until slightly translucent.
Step Five
Add the paprika and chopped tomato. Cook the tomato into the rice until red then add the saffron, chicken stock, chicken and chorizo pieces.
Step Six
Season with salt, spread the rice out to cover the bottom of the pan and boil for 5 mins until the rice grains begin to rise to the surface.
Step Seven
Reduce the heat to low, give the rice a quick stir and simmer for 15 mins. Add the peas for the last 5 mins of cooking. Leave to rest for a final 5 mins then serve with a squeeze of lemon.
