Fancy that weekend takeaway but know you're not going to feel great after or sleep pretty badly? Give this alternative a go to guarantee a delicious meal

Ingredients

Base:

  • 2-3 Chicken Breasts, thinly sliced

  • 3-4 nests Egg Noodles

  • Handful Bean Sprouts

  • 2 heads Pak Choi, sliced lengthwise

  • ½ White Onion, sliced

  • ½ Shallot or ¼ White Onion, Minced


    Chicken Marinade:

  • ½ tsp Salt

  • ½ tsp Chicken Bouillion Powder

  • â…› tsp Sugar

  • â…› tsp MSG, optional

  • 1¼ tsp Cornstarch

  • 1 tsp Light Soy Sauce

  • 1 tsp Chilli Oil, optional sub for Sesame Oil

  • 1 tbsp Vegetable Oil


Chow Mein Sauce:

  • 5 tbsp Boiling Water

  • 1 tbsp Sugar

  • 1 tbsp Dark Soy Sauce

  • 2 tsp Light Soy Sauce

  • 1 tsp Sesame Oil

  • ½ tbsp Oyster Sauce

  • ½ tsp Fish Sauce

Preparation

Step One

Marinade the chicken in the chicken marinade for 15 minutes while you prep your veggies.


Step Two

Cook the noodles to packet instructions, about 30 seconds to 1 minute, until the noodles start to loosen up and become individual noodles. Drain the noodles and rinse under cold water to stop them cooking further.


Step Three

Prepare the sauce by mixing all the ingredients together.


Step Four

Toast the bean sprouts and pak choi on high heat in a dry pan with no oil for about 2 minutes until wilted. Remove from the pan.


Step Five

Fry the chicken on high heat in a small amount of oil until cooked. Remove from the pan.


Step Six

Fry the shallots for 30 seconds then add the onions and fry for another minute before adding the noodles and frying for 30 seconds on medium heat.


Step Seven

Add the sauce and fry for a minute before adding back in all the reserved ingredients - chicken, pak choi and bean sprouts. Mix well and serve.
