About the Recipe
A delicious and nutritious easy dinner - we love a Friday night fajita, when you're low on energy but want something tasty and quick to eat!

Ingredients
500g Chicken Breast, sliced
3 Bell Peppers, sliced
1 Tin Kidney Beans
1 Red Onion, sliced
1 tbsp Olive Oil
1 tsp Paprika
1 tsp Garlic
1/2 tsp Cayenne Pepper
Salt and Pepper
GuacamoleÂ
2 medium Avocado
1 tsp Garlic
1/2 tsp Chilli Flakes
1 tsp Lemon/Lime Juice
10 Cherry Tomatoes, diced
Add Mexican Rice or Wraps as a side
Preparation
Step One
Heat a non-stick pan with a tbsp of olive oil. Add the sliced chicken and sliced onion. Cook until lightly browned - approx. 5 minutes at a medium heat.
Step Two
Add spices, sliced peppers and kidney beans, mix well. Cook until peppers soften.
Step Three
Serve with wraps or rice.
Options
Warm tortilla wraps (small or large) or Mexican Rice to serve
