About the Recipe
Goes well with a baked potato and cheese or in a taco shell with lettuce and Pico de gallo the next day too!

Ingredients
800g 10% Minced Beef
2 Chili
2 Red Onions
2 Red Peppers
3-4 Garlic Cloves
2 tbsp Tomato Paste
400g Canned Tomatoes
200g Sweet Corn
500g Kidney Beans
1 tsp Chili Powder
2 tsp Paprika
2 tbsp Cumin Powder
2 tsp Dried Oregano
150ml Beef Stock
1 tsp Salt
1 tsp Sugar
Preparation
Step One
Dice onion, garlic and peppers, then fry until fragrant and soft, add the mince and fry until fully cooked.
Step Two
Add the cumin, oregano, paprika, cayenne pepper and tomato paste, and cook until incorporated, about 2 mins.
Step Three
Chop peppers into small cubes.
Step Four
Add the tomatoes, stock, beans, peppers and sweet corn, season with sugar, salt and pepper to taste and simmer over low heat.
Step Five
Cook until the chilli thickens, 30 mins to 1 and half hours depending on how hungry you are.
Step Six
Serve with rice and sour cream.
