Level up your pulled pork with these delicious fritters

Ingredients
400g Frozen Corn
2 medium Eggs
1 Red Onion
120g Plain Flour
½ tsp Baking Powder
1 tsp Garlic Powder
3 tbsp Lemon Juice
Handful Coriander Leaves
1 ½ tsp Salt
½ tsp Black Pepper
Preparation
Step One
Place 200g or ½ of the corn in a food processor with all the other ingredients and blend until coarse.
Step Two
Stir in the rest of the corn and mix with a spatula.
Step Three
Add a heaped tablespoon of the mixture to a pan and cook over a medium heat until golden brown on each side, approximately 2-3 minutes each side. Repeat until all the mixture is used up.
