About the Recipe

We know you're going to love this curry. It's quick and easy to make, plus it's packed full of fragrant flavours.

Add any extra veggies of your choice into the curry or on the side - we'd recommend peppers and baby corn!

Ingredients

  • 600-800g Firm White Fish (Cod, Haddock, Coley, Tilapia), cubed

  • ½ tsp Mustard Seeds

  • 2 medium Onions, finely sliced

  • 4 Garlic Cloves, finely sliced

  • 400g Cherry Tomatoes, halved

  • 1 tsp Chilli Powder

  • 1 tsp Ground Coriander

  • 1 ½ tsp Ground Cumin

  • 1 tsp Salt

  • 200ml Hot Water

  • ¼ Lemon

  • Small Bunch Coriander

Preparation

Step One

Fry the mustard seeds in oil until they pop. Add the onions and garlic and fry until golden and soft, around 8 minutes. Then add the cherry tomatoes.


Step Two

Cover the pan with a lid and cook for 4-5 minutes until the tomatoes have cooked into the mixture.


Step Three

Add the chilli powder, ground coriander, cumin, salt and hot water. Bring to a bubble.


Step Four

Add the fish pieces, stir gently and cook for 3-4 minutes.


Step Five

Serve with rice, some coriander and a splash of lemon juice.
