About the Recipe
This delicious summer salad is great on its own with a little protein topper (like chicken) or as a side to your meal!

Ingredients
1 Cucumber
1 Salad Tomato
1 Red Onion
56g Feta Cheese
1/2 cup Olives (no stones)
2 tbsp Olive Oil
4 tbsp Red Wine Vinegar
1 tsp Dried Oregano
Salt and Pepper
Preparation
Step One
Cut all vegetables into large diced chunks and place in a medium sized bowl.
Step Two
Season with salt and pepper.
Step Three
Crumble feta into the vegetable medley and add olives, vinegar, oil, oregano and stir.
Step Four
This salad will taste better the longer it sits and marinates in the vinegar.
