About the Recipe

Ingredients

  • 1 Aubergine

  • 3 Peppers

  • 1 Red Onion

  • 1 Courgette

  • 2 Handfuls Mushrooms

  • 2 tbsp Olive Oil

  • 3 Cloves Garlic

  • Salt and Pepper

Preparation

Step One

Chunky chop all vegetables.


Step Two

Line a large baking tray with grease proof paper and lay the vegetables out on top.


Step Three

Drizzle oil on top and shake around to mix.


Step Four

Finish with a sprinkle of chopped garlic, salt and pepper.


Step Five

Bake for 20 minutes at 180 degrees C.
