About the Recipe
We are big big fans of tacos over here! Get stuck into a mix of taco fillings, but always with salsa, red cabbage and corn!

Ingredients
2 cans Jackfruit, in water or brine
½ large White Onion, thinly sliced
4 Garlic Cloves, minced
1 tbsp Smoked Paprika
1 tbsp Ground Cumin
1 tbsp Chilli Powder
½ tsp Salt
3-5 tsp Chipotle Paste
2-3 tbsp Maple Syrup
3 tbsp Lime Juice
150ml Water
8 Corn or Flour Tortillas
½ head Red Cabbage, shredded
Handful Coriander
½ Onion, minced
Salsa, of preference
Preparation
Step One
Thoroughly rinse and drain jackfruit. Chop and shred the pieces into desired size. Rinse the jackfruit through once more in a colander and thoroughly dry.
Step Two
Heat a large pan over medium heat, once hot add a small amount of oil to coat and cook onions and garlic until the onions are golden brown and softened.
Step Three
Add the jackfruit, salt, paprika, cumin, chilli powder, maple syrup, chipotle paste, water and lime juice. Cover and cook for 20 minutes on low to medium heat.
Step Four
Turn the heat up to medium high and cook for 2-3 more minutes for a little extra colour and texture.
Step Five
Serve with the tortillas, cabbage, coriander, minced onions and preferred salsa.
