Jamaican Chicken Curry

Ingredients

  • 8-10 Chicken Thighs

  • 1 Onion, finely sliced

  • 3 Garlic Cloves, crushed and minced

  • 2 tbsp Jamaican Curry Powder

  • 1 tbsp All Purpose Seasoning

  • 2 Large Tomatoes, deseeded and chopped

  • 2 Bay Leaves

  • 500ml Water

  • 1 Chicken Stock Cube

Preparation

  1. Marinade the chicken thighs with the sliced onion, garlic, curry powder and all purpose seasoning for 15 mins to 2 hours (the longer the better). Separate the onions and garlic from the chicken when ready to cook.


  2. Fry the chicken in batches over medium high heat until browned all over. Remove from the pan.


  3. Lower the heat to medium and cook the onions and garlic from the marinade for 8 minutes or until softened.


  4. Return the chicken to the pan with the bay leaves and chopped tomatoes. Stir well before adding the water and stock cube. Cook for 40-50 minutes on a simmer.


  5. Serve over long grain rice or rice and beans with some lightly fried okra or cabbage greens.
