Jeana's Lentil Soup

About the Recipe

This one comes straight from Amy's mum. She's not the biggest lover of cooking, but this one is a firm favourite and an easy way to get more veggies into your day!

Ingredients

  • 1 large Onion

  • 3  Carrots, chopped

  • 3 Potatoes, chopped

  • 1 cup Dried Red Lentils

  • 1 tbsp Olive Oil

  • 2 Vegetable Stock Cubes

  • 2 litres Hot Water

  • Pinch Chilli Flakes

  • Salt and Pepper

Preparation

Step One

Add the lentils to a bowl and cover with water to soak and swell.


Step Two

Grab a large pot and heat. Add your oil and onion and soften. When the onions are soft, add carrots and potatoes.Then add two veg stock cubes with about 2 litres of water.


Step Three

When the soup comes to a boil, drain the lentils and add them to the soup.


Step Four

Add chilli, salt and pepper for flavour and to your preference.


Step Five

Simmer for 30 minutes.


Step Six

Blend or serve chunky, whichever you prefer!
