Mexican Rice

About the Recipe

A great partner to your pulled pork!

Ingredients

  • 1 Onion, diced

  • 2 Garlic Cloves, minced

  • ½ Red Pepper, diced

  • 1 small Jalapeño, diced

  • 200g Long Grain Rice, uncooked

  • ½ tsp Cumin

  • Salt

  • ½ can Canned Tomatoes

  • 250ml Chicken or Vegetable Stock

Preparation

Step One

Wash and drain the rice.


Step Two

Fry the onions, garlic, red pepper and jalapeño over a medium heat until the onions become translucent.


Step Three

Add the rice and toast until golden brown. Stir in the cumin, salt, canned tomatoes and stock. Bring to the boil, cover, and simmer over a low heat until the rice is cooked, approximately 15 minutes.


Step Four

Fluff up the rice using a fork and garnish with some coriander leaves and lime.
