About the Recipe
This bean salsa is a great accompaniment to your tacos - we wouldn't have them without it!

Ingredients
150g canned Black Beans
150g canned Kidney Beans
150g canned Sweetcorn
5 sprigs Spring Onions, sliced
½ bunch Coriander, roughly chopped
2 Limes, juiced
1 tsp Paprika
2 tbsp Olive Oil
Preparation
Step One
Drain and rinse the beans. Cover with cold water, bring to the boil, then lower the heat and simmer for 30 minutes until tender. Drain again.
Step Two
Mix the cooked beans, corn, spring onions, coriander stalks and leaves, lime juice, oil and paprika into a bowl. Chill until cool.
