Prawn and Mango with Rice Noodles

About the Recipe

This recipe is your answer to fast and delicious food! Want to make it even faster? Marinate the prawns whilst you're at work and it'll be ready to go in the time it takes to heat your noodles!

Ingredients

  • 450g Uncooked Prawns, peeled and deveined

  • 450g Mangoes, cubed

  • 1 tsp Sesame Oil

  • ½ tsp White Pepper

  • 1-1.5 inch Ginger, finely chopped

  • 2 Garlic Cloves, finely chopped

  • 2 Sprigs Spring Onions

  • 3-4 nest Rice Noodles

Preparation

Step One

Cook the rice noodles to packet instructions, approximately 2 minutes. Drain and put in cold ice water to stop them cooking further.


Step Two

Marinade the prawns with sesame oil and white pepper. Fry on high heat until cooked (pink). Set aside.


Step Three

On medium heat fry the ginger, garlic and spring onions for 10 seconds, add the cooked prawns, and mango and stir fry for 1 minute until the mango is warm.


Step Four

Add the rice noodles, mix and stir fry for 1 minute until incorporated. Serve.
