About the Recipe
You can pull this together pretty quickly with one person in the kitchen, whilst the other gets the coals going on the barbecue. Or you can take your time and maximise the flavour and tenderness by marinating overnight.

Ingredients
For the GrillÂ
600g Pork Loin (Tenderloin or Shoulder also works), cut into long ½ inch thick stripsÂ
½ tsp Coriander Seeds
½ tsp Cumin Seeds
½ tsp White PeppercornsÂ
1 tbsp Brown SugarÂ
¾ tsp SaltÂ
¾ tsp Ground TurmericÂ
½ tsp Ground CinnamonÂ
1 tbsp Tamarind PasteÂ
½ cup Coconut MilkÂ
8-10 Wooden Skewers, soaked for 30 mins in waterÂ
For the Peanut SauceÂ
½ cup Roasted Unsalted PeanutsÂ
1 ¼ cup Coconut MilkÂ
2 tbsp Red Curry PasteÂ
2 tbsp Tamarind PasteÂ
2 tbsp Palm Sugar, finely choppedÂ
1-2 tsp Fish SauceÂ
Preparation
Base
Grind the coriander seeds, cumin seeds and peppercorns in a mortar and pestle until very fine. Then transfer to a mixing bowl with the brown sugar, salt, turmeric, cinnamon, tamarind paste and coconut milk. Stir well to mix.Â
Add the pork to the marinade and mix very well to ensure all the pieces are coated. Marinate for 20 minutes up to overnight in the fridge.Â
30 minutes before you are ready to cook, soak the skewers in water. When ready to cook, skewer the pork lengthways.Â
To make the peanut sauce, use a mortar and pestle to grind the peanuts until mealy. Be careful not to turn it into peanut butter.Â
Put about â…“ cup of coconut milk into a small pot and bring to boil over medium heat. Add the curry paste and cook for about 3 minutes stirring constantly until the mixture is very thick and the coconut oil starts to separate from the paste.Â
Add the remaining coconut milk and stir well before adding the peanuts, tamarind paste, and palm sugar. Simmer for 5 minutes, stirring frequently until thickened to a desired consistency.Â
Taste and add fish sauce as needed.Â
On the BBQ
Light the Barbecue and wait until the coals grow white hot. Set up a 2 zone grill by pushing the coals to one side.Â
Arrange the pork perpendicular to the grill. Discard the marinade.Â
Cook for 2-3 minutes, flip and cook on the other side for another 2 minutes or until cooked through or a little charred. Serve with the peanut sauce.Â
