About the Recipe
We love it when you nail your half plate of veggies, so why not try this recipe to keep mixing it up and making your veg plates fun!

Ingredients
1 large Tomato, diced
1 Cucumber, diced
½ Red Pepper, diced
¼ Red Onion, finely diced
Handful Olives
100g Sirene Cheese (Substitute with Feta)
2 tbsp Extra Virgin Olive Oil
Salt to taste
Preparation
Step One
Mix the tomato, cucumber, pepper, onion and olives in a bowl. Drizzle with olive oil and season with salt.
Step Two
Grate the cheese over the salad until covered.
