About the Recipe
As you can probably tell by now, we love a low effort high reward meal and this is a perfect one for that. Meal prep doesn't need to be difficult. Get 1-2 slow cookers set up and you can nail your prep with one 20 minutes of effort.

Ingredients
500g Chicken Thigh Fillets
1 White Onion, diced
2 Garlic Gloves, diced
2 tbsp Ginger, grated
2 tbsp Curry Powder
1 tsp Garam Masala
1 tsp Cumin
1 cup Frozen Peas
1 tin Light Coconut Milk
1 Yellow Pepper, sliced
1 Red Pepper, sliced
1 Sweet Potato, diced
1 tin Chopped Tomatoes
1 tbsp Red Curry Paste

Preparation
Step One
Place chicken thighs into slow cooker.
Step Two
Chop onion, peppers, sweet potato and garlic and add to slow cooker.
Step Three
Add diced tomatoes and frozen peas. Stir contents.
Step Four
In a small bowl combine the coconut milk, ginger, garam masala, curry powder, cumin, and curry paste.
Step Five
Stir and coat contents of slow cooker.
Step Six
Set to low for 6 hours or high for 3-4 hours.
Step Seven
Once cooked, taste and add pepper to taste. Serve over brown rice, garnish with chopped fresh cilantro.
