Soy, Ginger and Garlic Pork

About the Recipe

We went through one of those phases where we found a new recipe and then lived on it for four weeks. This was it. It's quick and easy in the pressure cooker and tastes amazing. Serve it with some rice or noodles and heaps of crunchy veg and you're guaranteed to feel happy and satisfied.

Ingredients

450g Pork Tenderloin

1 chunk Ginger, grated

3 cloves Garlic, grated

1 tsp Honey

1/3 cup Soy Sauce

1/3 cup Water

1/4 cup Brown Sugar

1 tbsp Sesame Oil

2 tsp Cornflour

1 tsp Sesame Seeds

2 Spring Onions


Sides to serve:

75g Basmati Rice per person

Baby Corn

Sugar Snaps

Bean Sprouts

(All the crunchy veg!)

Preparation

Step One

Stir together all the sauce ingredients in the base of your Instant Pot.


Step Two

Add the pork tenderloin, and set the steam release handle to 'sealed'. Cook on high pressure for 5 minutes, then allow the pressure to naturally release for 7 minutes. If there is any pressure remaining, release it.


Step Three

If it is ready, remove the pork tenderloin from the Instant Pot and set aside to rest. If not, set the pot to 'sautee' and simmer the pork tenderloin for a few minutes.


Step Four

Stir together the cornstarch with 2 tablespoons of cold water, then add to the sauce in the Instant Pot. Press the sautee button and allow to cook, stirring frequently, until thickened.


Step Five

Using oven mitts, remove the pot from the Instant Pot and set aside so your sauce doesn't burn.


Step Six

Serve with rice and veggies, spoon the sauce over everything.
