Tofu Skewers with Avocado Salsa

About the Recipe

This recipe works really well on the BBQ and is a great option to bring along to gatherings.

Ingredients

Tofu Skewers:

  • 1 Block Extra Firm Tofu

  • 2 tbsp Soy Sauce

  • 1 ½ tbsp Lime Juice

  • 1 ½ tbsp Dijon Mustard

  • 1 ½ tbsp Maple Syrup

  • ¼ tsp Cayenne Pepper

  • ¾ tsp Garlic Powder

  • ¾ tsp Onion Powder

  • 1 Mixed Pepper

  • 1 Red Onion

  • Wooden Skewers


    Salsa:

  • 1 Large Avocados

  • 2 Fresh Mango

  • ½ Red Onion

  • ½ Red Bell Pepper

  • ½ Cucumber

  • 2 Jalapeño Peppers

  • 3 tbsp Orange Juice

  • 3 tbsp Lime Juice

  • Handful Coriander Leaves

Preparation

Step One

Soak wooden skewers in warm water for 20 to 30 mins to prevent burning. If using metal skewers you can skip this step.


Step Two

Mix together the soy sauce, lime juice, dijon mustard, maple syrup, cayenne pepper, garlic powder, onion powder. Chop Tofu into 1 inch cubes. Marinade the tofu for 15 minutes to overnight (depending on time).


Step Three

Chop peppers and onions into cubes. Slot the marinated tofu over the skewers, with a piece of red pepper and onion between the cubes, and grill on high for 3-4 minutes each side.


Step Four

In the meantime, dice and mix together the salsa ingredients. Serve the skewers with boiled rice or Mexican rice.
